Punjab Ki Rasoi  hosted by Vivanta Kathmandu is a delightful Punjabi food festival celebrating the rich and hearty flavors of Punjab. Known for its carb and protein-rich dishes, Punjabi cuisine reflects the farming traditions of the region, offering a variety of both vegetarian and non-vegetarian delicacies.

Prepared by Chef Sanjeev Kr. Suman, Chef Shoaib Ali Khan and their talented team, the festival was a tribute to the Punjabi community and their vibrant culinary culture. With lunch served from 12:00 PM to 4:00 PM and dinner from 7:00 PM to 10:45 PM, the thali options are  priced at NPR 1,500 (nett) for non-vegetarian and NPR 1,200 (nett) for vegetarian.

The food was as visually appealing as it was delicious. The staff’s warm smiles and attentive service enhanced the experience, while the cozy and lively ambiance added to the joy of dining.

 


Welcome Drink


Shardai

The welcome drink, Shardai, was a refreshing blend of almonds, fennel seeds, watermelon kernels, rose petals, pepper, vetiver, cardamom, saffron, and milk. Its light sweetness and perfect mix of flavors made for a delightful start.


Appetizers


Bhutteyan Da Kebab

This dish gave humble corn a royal twist. Poached, blended with herbs and green chilies, and pan-grilled to perfection, the kebab was soft, light, and packed with flavor.

Amritsari Fish

Crispy on the outside and tender on the inside, the Amritsari fish was perfectly spiced—a true treat for fish lovers.


Main Course


Paneer Makhani

The Paneer Makhani, prepared in a creamy tomato-butter gravy with dry fenugreek leaves, was flavorful and rich. Paired with Amritsari Kulcha, this dish was a vegetarian delight.

Murgh Makhani

The buttery chicken was tender, flavorful, and absolutely mouthwatering. This classic dish was a standout favorite.

Dhingri Mutter

Fresh mushrooms and green peas cooked in a flavorful onion-tomato base with coriander made this dish simple yet delicious.

Rajma Raseela

This slow-cooked kidney bean curry had a silky smooth texture and a comforting, homely flavor.

Sarson Da Saag

A Punjabi winter classic made with mustard leaves, garlic, and ginger, Sarson Da Saag had earthy flavors that were comforting and paired beautifully with Makai Ki Roti.

Punjabi Vegetable Pulao

Light and fragrant basmati rice with a colorful mix of veggies and aromatic spices made this pulao a delightful addition to the meal.

Breads

The Makai Ki Roti (corn bread) and Amritsari Kulcha (flatbread stuffed with potatoes) were cooked in a clay oven. They were crispy and perfect accompaniments to the flavorful curries.


Accompaniments


The meal included fresh Kachumbar Salad, crispy Papad Rolls, and tangy pickles, which enhanced the overall dining experience.


Dessert


Panjiri

This traditional sweet dish, made from whole wheat flour, ghee, sugar, nuts, and seeds, was a fitting end to the meal. Its nutty richness and balanced sweetness were truly satisfying.
