Hyatt Regency Kathmandu hosts exclusive wine dinner

Some of the most important wines from Italy’s renowned Zonin winery was paired with a four course dinner at a one night only wine event at Rox Restaurant, Hyatt Regency Kathmandu.

Rox Restaurant, the signature outlet at Hyatt Regency Kathmandu hosted their exclusive Italian wine dinner on May 27, 2017 showcasing the finest wines from Italy which were perfectly paired with a specially crafted menu by Chef Mauro Ferrari to give diners an authentic Italian experience. Chef Mauro is an experienced Italian Chef who has launched the finest restaurants in Tuscany and Milan. He has also worked at the Grand Hyatt in Muscat and is presently with the Hyatt Regency Chennai.

Chef Mauro was joined by Fraser Jones, an Italian wine specialist representing Zonin, Italy's largest family owned production company. He briefed the guests present about the wines on display at the Rox Restaurant. Both Chef Mauro and Fraser visited every table and to inform and interact with patrons about the type of wine that was to accompany each of the dishes served.

The exclusive wine dinner included a four course meal. As Chef Mauro originates from Milan, the four course meal celebrated the essence of Milan. The first course or il Primo consisted of soft smoked trout laid on sesame crispy bread with herbs cheese and green peas soup. It was rich in flavour and the Himalayan trout blended very well with Masseria Altemura – Fiano, a classic white wine which was full of aroma and mellow texture.

The second course or il secondo had a well-cooked saffron risotto with a touch of balsamic vinegar reduction. The risotto was complimented by a red wine Castello di Albola Chianti Classico which had a fruity finish and aftertaste.

The main course also known as the portata principale had slow cooked tender lamb shank accompanied by buttery mashed cardamom potato and porcini. It was accompanied by Masseria Altemura "Sasseo" Primitivo” ,a red wine with mouth filling flavour and highly mature fruitiness perfect for red meat.

The final part of the meal was a crispy hazelnut crumble tart accompanied by mascarpone coffee sauce. The dessert was paired with Zonin Moscato Spumante, a high quality aromatic sparkling wine with fresh aromatic tone of the Moscato grapes.

This event also introduced the new menu at The Rox which while retaining recurrent favourites, now hosts a dazzling array of new items from southern Europe to rustic Italian and gives all the more reason to head to Rox Restaurant. You must try the Italian dishes and wines for an authentic Italian experience in Kathmandu.
